+1 for Donkeys and Lac Bay Jibe City. Or do a combo trip.
You could get up late morning, hit the Donkeys (oh that came out wrong) on the way to a windsurf and lounge session at Lac Bay. The food at Jibe City was pretty good too. Check out their http://www.breathebonaire.com/index.php?CURRENT_CAM=bonairecam4 webcam. We sat under the thatched roof you see on the left. Was an awesome way to spend our last day on Bonaire.
If you have time, check out the conch shell shacks and stuff across the bay on the way back. The road there is bad dirt, best done in a truck. You'll see flamingoes there too. Very local flava.
 
There is also a Butterfly Farm on the way out to the conch beach, never been. 'Golf' course around that side as well, I use the term loosely, it is Bonaire. Rent scooters and tour the island. Stop in Rincon and sample at the Kadushi factory. There is also a goat farm, not sure of days and times open, but her goat cheese is available in stores on island.
 
Lac Baai for sure. But we also love (best in the mornings because of the heat) a hike up the Brandaris, the hill in Washington park, beautiful views!
 
Can you please tell me how this is done "We fished on snorkels with Lac Bay for bonefish"? I am a long time fly fisherman from Colorado. I just don't what you mean by "We fished on Snorkels"? Can you tell me how you did this? Thanks ahead of time
