What kinds of things are there to do out of the water and where are they located is there night life or any good ways to burn some surface time
 
You can stroll around Georgetown but it can be touristy, visit the turtle farm, visit the Museum, see the botanical park, visit Cathy Church's UW photo center, see the Pedro St. James Nat'l historic site (large manor house and grounds), or go to Hell. The latter is a small town with the same name and has interesting jagged landscape and a post office where you can mail a postcard from hell. Not a whole lot else there though.;)

As far as night life, we asked around when we were there about live bands and night life. It's been awhile since we were there so I am sure it has changed. My wife wanted to see Barefoot Man and we found him, at the time, on Rum Point but I understand he is usually out of The Reef Resort. We crossed via the ferry to Rum Point. Lot's of other steel drum type music and other around as well.

Water stuff there's sportfishing, kayaking, jetskis, parasailing etc. Most of the outdoor activities are found here: http://www.caymanislands.ky/activities/default.aspx

I think there's 3 golf courses now. One is private for guests of the Ritz Carlton - it's only 9 holes also.
