I've stayed at the Westin on seven mile beach a couple of times. It sounds like the kind of place you are looking for. It has a nice beach and pool. There is some snorkling if you walk up the beach a little and swim out to a little reef. Redsail dive operator is in the hotel and their boat leaves from the beach in front of the hotel, very convient.
