We had a great time with Captain Hooks recently - http://www.captainhooks.com/. They are very casual and don't require hand-holding (no DM in the water with you, unless you ask and pay for it). Boats weren't crowded during spring break - surprise!

Also, a great fish restaurant is just past Captain Hooks on the same side of the highway - you can also buy it to take home - we did both, several times.

The Thunderbolt is a fun wreck, as are the 350+ lb jewfish that like to swim around its base.
 
If you dive through Abyss (or anyone for that matter), make sure you let them know you hope to be able to dive the Thunderbolt well in advance. Last time down there we waited till the last minute, and because there was a student on board for checkout dives, only visited some shallow reefs.
