I sincerely believe that if lionfish were served in restaurants or had some other significant commercial value that the Florida/caribbean population would decline noticeably.

One problem with that is that "lionfish" sounds too noble to eat for dinner and perhaps too similar to PETA's "sea kittens." Just think how much more popular "Chilean Sea Bass" is than "Patagonian Toothfish" or "Orange Roughy" than "slimehead"!

What else could this fish be called when served in restaurants? "Lowcarbfish?"

Several posters here have referred to eating lionfish (or what I now call "spiky seabass" or "spiny grouper"). What does it taste like? Are there any special methods of preparation?

Well, legally caught lionfish would probably be an improvement to Cozumel restaurants from the fish caught within the marine park. And yes, I've sen the boats out in Punta Sur area of the park when we've arrived bright and early to dive.
