Its going to be A LOT easier to use Dressel Divers, and have all of your diving at your fingertips. You are on vacation, and IMO you won't want to be driving around in a taxi to go to other dive ops.
The dive sites are so close, that it makes sense to do 1 dive, go back to the Iberostar and hang out by the pool, eat, use the bathroom, etc for you SI, and then go do a 2nd dive with SI by the pool, a 3rd dive and then back to the pool, etc.

Even the 2 or 3 tank dives in Coz spend the surface intervals on the beach near the beach clubs, so that people can use the facilities.

My experience with Dressel Divers was very positive.

It will definitely be worth going to Coz for a day, but arrange it ahead of time. You may be able to set that up with Dressel as well.
