As several people have recommended, you should consider getting some of your kids training done at home. However, this is not madatory by any means. It only takes 3 days to get certified on Utila. Kids learn very fast and I think make great students. Some seem to be born fishes and I've found most follow the rules and instructions very well. If you can find instruction at home, don't want to pay the price, or just find in inconvenient, don't worry about it. Just enjoy the trip and have fun. It's not worth losing any sleep over it.
 
Thanks again for all the responses, I am trying to figure a way to do the pool stuff before we head down to Utila. We live on an island and did have a shop here but no more. So although there are plenty of dive shops not real far away, it involves a ferry ride and overnight stay. With school still going and me and the wife usually working on the weekends it makes it a bit of a challenge just for scheduling.
 
Anthoneys Key sounds great on Roatan but a bit too pricey.

Not sure if you've made your decision yet, but you might want to give Anthony's Key another look. Perhaps a bit more expensive, but we thought it was a good deal for all that you get. The Kid's Dolphin Camp was excellent. We're going back next week. You can see my short review and some photos from last year's trip here:
