And if so, what should I use? regular low-profile SS bolt and wing nut?
If i dont use an STA, should I bolt my wing?

No, not necessarily, besides, the head of the bolt would cause the tank to sit to one side or the other.
If your BP has slots for the tank straps, just lay the wing down on the BP, run the tank straps through the slots, re-couple and then set your tank.
Properly secured, the tank will hold the wing in place.
I would not try this, however, if the BP allows for use of only 1 tank strap, though I've never seen a BP fashioned in that manner.

Kraken is correct that the bolts can become pivot points for the tank, also good way to scratch the finish on the tank.
If you want to locate the wing on the plate just use zip ties thru the holes, low profile, no scratches, no corrosion, cheap.

I've never seen a bolt that sits perfectly flat on the wing. So, you'll probably end up scratching your tanks.
If your wing is has multiple holes for height adjustment, I've seen many divers that use zip-ties. I own a DR Venture wing which only has one pair of grommeted holes. In my case, the zip tie solution won't work unless someone can tell me where to find zip-ties that are 3 ft long. Instead, I run a piece of looped bungee cord through the holes in the bp and wing, and tie off the ends with a zip-tie.
It's simple and inexpensive.
I personally like the stability that the STA gives the tank, but I do not like the way it positions the tank away from my back.

Do realize that if you dont use a STA there is the possibilty of the tanking slipping off to the side or getting all cockeyed due to no STA to keep it in place as it will be resting on the spine of the BP. The pioneer series wings have a built in STA that allows you not to use a traditional STA and keep the tank in place.
You can use a bolt with a wedge-shaped head that sits inside the grommet if you wanted to. Doesn't make any difference underwater but will make setting up easier.

I'd recommend that regardless if you're using a Venture wing. Why light weight, though?
