Side by side, w/paddles under the bungees fore & aft works great. Picture it looking sort of like an outrigger.

Make sure you secure the paddles though, bad form to drop them overboard :)
 
oh...double-hulled canoe Hokule’a, style!

I get the catalog, but we don't have one in Hawaii....shipping is a outta site.
