Keeping the feet a little wider apart will definitely help your stability along your long axis (less tendency to roll, greater ability to stop it.) Using heavier fins may have made you more horizontal but is unlikely to have affected the roll tendency.

Can't help you with whether you can change your STA, but I believe you can buy STAs that aren't weighted, or that add minimal weight to your rig.
