No, stupid browser keeps logging me out.

I've got some house-cleaning to do and a cheesecake to make because I'm having guests over for dinner tomorrow night...and like always, I left most of it until the last minute.

So... I'll be in and out of here!

How did the rest of your day go Fish?
 
my back is a bit better. He figures I better give diving a miss tomorrow but if I am good Sunday I could dive. Hopefully the medication and treatments will settle this episode quickly... just taking it easy.. :hugs:

I'm glad it's a bit better, and taking it easy sounds like a good idea :hugs:
 
How do you make the base for your cheesecake? In NA we use Graham Cracker crumbs but you don't have those here

I usually use Granita biscuits (Arnott's) they give nice fine mix when you add the butter, but I made a chocolate liqueur cheesecake tonight so it has chocolate biscuits for the base; I used chocolate Ripples (Arnott's again)

Interesting because I finally worked out that Granitas are the best thing to substitute in my recipes calling for Graham cracker crumbs

You should get NZ to bring some Dream Whip when he comes

Yes, he's told me about that, but to tell the truth I usually use whipped fresh cream as I've not liked most non-diary toppings.

It is divine and suitable for a dinner party:

Chocolate Liqueur Cheesecake:

(you may double this recipe, but as it is very rich you only need a small slice at a time)

Ingredients:

Base:

8 oz plain choc ripple biscuit crumbs

4 oz butter, melted

Mix together and press into 8 inch tin and refrigerate.

Filling:

1 lb of Philly cheese

1/2 cup sugar

2 tablespoons Tia Maria (or other coffee liqueur, like Kahlua)

1/2 cup strong black coffee

1 tablespoon gelatin

4 oz dark chocolate, melted.

1/2 pint cream, whipped.

Method:

Dissolve gelatin in the hot black coffee and refrigerate until almost set.

Beat cheese and sugar until soft then add Tia Maria, coffee mixture and slightly cooled melted dark chocolate. Beat again until smooth and combined well.

Fold in whipped cream. Pour into base and refrigerate overnight.

Serve with berries and chocolate curls.

YUM!
