One of the best ways to become educated on what's available is to peruse catalogs.
The of the biggest EMS suppliers are Alliance, Dixie and Moore. Gall's and Boundtree are big, too, but a bit higher priced. Just call them up, they'll be happy to send you their catalogs. For links to their sites see http://www.emsmagazine.com/links.html.

After a decade in pre-hospital medicine, if it were my kit it would have the following:

E cylinder
0-15LPM regulator
Demand-valve and mask
Adult non-rebreather mask and tubing
Pedi non-rebreather mask and tubing
Bag-valve-mask with O2 reservoir and tubing
1 set of oral airways
1 set of nasal airways
1 roll of 2" medical tape
A hard-sided carrying case (waterproof if on a boat)

However, considering the training issues associated with a demand-valve (as mentioned above), you might be better served by substituting an extra E cylinder in lieu of that. Oh, and the tape is for when the stupid strap on the mask breaks!
