I will be in the Gulf Shores area in August, looking to do some diving. Any suggestions as to dive shops to work with, or sites not to miss? AOW and Nitrox certified, 25+ dives.

Down Under Dive Shop is a great place. There are some cool wrecks that they will take you to. Various barges and wrecks that hold some cool Marine life.
The Oriskany is the big attraction around there and a fun dive. It is known as a deep advanced dive but there is plenty to see from 85-130'. Or 85-100 for that matter.

There is a new site called the Lulu that just sunk last week. It should be a fun dive as well. You can also do a few shore dives at the jettied or whiskey wreck. Down Under was very helpful in showing me how and when to do these.
