I just went through what you are looking to do, in fact it took me almost a year to decide. I finally went with DSS, and the reason is, at this point I was not just buying equipment, I was buying knowledge. I pestered Tobin on the phone and via PM. Even after I got it this week I was asking, "what's this for?", "why is this set up this way?", etc. Everyone has their favorite brand or vendor, and every vendor has specials and packages. Tobin explained what was right for me, not what was right for the mass market. As has been said, he can be a little gruff, but considering some of the questions I asked, I'm surprised he didn't drive cross country and dope slap me :D.

1) I'm looking for something very simple. I don't need much, 2 D-Rings and maybe a pocket (all of which I can add to a very basic harness myself).

Don't put a pocket on the harness. That really is not a great idea, the BP/W is very streamlined and a pleasure to dive, but pockets make the rig awkward, and are hard to access. Pockets belong where they are on your pants. If you are diving dry, most dry suits have one or more. If you are diving wet, get some of those pocket shorts. I use them every time I dive in the tropics with my 3 mm shortie wetsuit, and they are great. Much better than clipping a bunch of stuff on to your harness. Of course, you may not even need the pocket if you are diving warm water reefs with a minimalist setup.

One other brand you didn't mention is Halcyon, which is what I dive. I find that it's a good choice if you are having a problem with your buoyancy due to the extra weight of the money in your pockets. In that case, the Halcyon rig will help you get rid of some of that... :)

+1 for DSS, great service and good for me since I had no idea what I needed. Tobin gives you a lot of great resources. I love the no STA, the easy assembly/disassembly and the option to have the cinch harness adapter later if need be. Plus I can add the weight plates later for cold water diving. The plate on its own seems pricey, but the packages will put you in the $460-$480 plus shipping so not bad compared to others. Customer service and build quality are excellent. Depending on your body type it is also nice be able to choose a shorter or longer plate as well. I am 5"7 and the regular plate fits me well, but if I was shorter or very tall (hubby is 5'11 and would need a longer plate), it would be nice to have the option.

Happy Hunting - its not so long ago that I was doing this exact same type of thinking!

Don't sweat the money. Diving is expensive anyway.

Just buy a cool BPW Infinity from Halcyon and chicks will swoon and men will prostrate before you.

This is why I bought a DSS package, because I'm only 5'1".

Link? I see a doubles package at that price, but not a single

[h=3]Backplate, Harness and Wing Systems (BPW) by Dive Rite

First one is for Single Tank then further down is one you can choose to really customize the system. Also, DGE has Hollis and Hog systems for sale. I've seen the Hollis BP and they are REALLY nice. If your ok with buying used you can sometimes find whole setups for sale or parts of (I know you can snag a Hollis SS BP for about $85, usually around $140).
