Another vote for the T&C trip and I highly recommend the Explorer Ventures boat. We did it last year and it was one of the best liveaboards I have been on. Great everything! We do go to Little Cayman almost every year but if I had to choose just one, it would be the T&C. Also, the guy who owns Explorer Ventures stands behind his product. Not all of the "big name" liveaboard companies do that.
