We're big fans of Divetech. They will try to go North if conditions allow, but it can be dicey this time of year. If you can go north, there are a number of great sites, incuding Eagle Ray Pass, Black Forest, Tarpon Alley. The nice thing about Divetech is that they try to go to the places that the DMs like to dive themselves.
You definitely should do some shore dives at Turtle Reef while you are there as well.
