Since the cayman dollar is a lot closer than say the peso conversion
I guess it's not as necessary to know the difference but that being
said since it is called a dollar it is easy to start thinking of it as the
same as u.s. dollar. It probably varies from day to day but I calculated
a lunch check and found the price in u.s. after ordering using cayman
dollars on menu to be about 20 percent more. I found the bus transportation to
be very easy to use and quite inexpensive at 2 to 3 dollars for a single
trip. I used the bus from seven mile beach down to georgetown and again
up to the turtle farm. The diving was great and the two tank trips seem to run
about 100 to 110 in u.s. dollars.
 
despite the rate tables, the Cayman Dollar is pegged to the US dollar at $1.20 US dollars per Cayman dollar (the Cayman dollar is worth more)

but if you don't exchange US dollars, the stores in the island will take your US dollars at $1.25, so it pays to exchange first and not use US dollars as currency

another thing is that Grand Cayman is expensive. it has rather high prices; that added to the unfavorable exchange rate makes it even more expensive
 
As H2Andy stated, the Cayman dollar is set at a fixed rate of exchange to the US dollar.

If you have US dollars and want to exchange to Cayman dollars then it is US$1 = CI$0.80

If you have CI$ and want to exchange to US$ then it is US$1 = CI$0.84

Cayman is one of the strongest curriencies relative to the USD in the world. There is no sales tax at the point of sale. Most items are instead subject to an import duty which is paid by the merchant on the wholesale value of the goods.
