Four trips to Coz with numerous dives and have not found a bad one yet.
 
Just know that the dive boats are not a taxi service. You can suggest sites to visit on boats that choose sites by consensus, but the majority rules and the DM can override the vote.

The good news is that you will not likely be disappointed no matter which sites you visit.

How about Cedral with Jeremy of Living Underwater or Colombia Shallows?
 
Well, I've only been there once, and I don't remember the names of all the sites we dove. But I would say one thing -- if you can pull it off at all, do a night dive. The night dives we did were the BEST! Octopus, lobsters, turtles, and a wide variety of fish we didn't see during the day. I would have dived every night, had it been possible.

I can't agree more - My night dives were awesome, and during the day I just let my captain and Dm choose the sites and they were all great.
 
All the sites can be fantastic in my experience. I too love Columbia Deep but sometimes the vis gets a little cloudy, depends on the day. I always hated Yucab, until one day the current was running backwards and slow, and it was one of the most beautiful dives of the trip.

My advice is just relax, see as much of the reef as you can and enjoy what the diving gods give you. When you return to Cozumel, and you probably will, you'll have some ideas.
 
I agree with all the posters that diving in Coz is good everywhere. Although, it is not as good since the big hurricanes. I loved Columbia, Santa Rosa Wall, and Coz's signature dive, Devil's Throat. Devil's throat is an advanced dive that is done is two parts. The "throat" is a coral chimney that starts at about 80 feet and exits deep (around 120-130 feet) the second part is then to enter what called the Cathederal where there is white coral in the form of a cross. I understand that some dive ops do not do the Cathederal but it is wonderful. It is a great dive but it is an advanced dive.
