In the short term a coke addiction would be heaps more expensive, but since you will live heaps longer being addicted to scuba I think it would be more expensive in the long run.

Perhaps I will need to open two places :V
 
I was at West End in February and ate at Pura Vida several times. I really liked the food. As for the taxes, more restaurants were charging tax than not that trip. A service charge is in lieu of a tip. The only places that get me riled up with a service charge are the ones where the waiter just gives you a number for the bill and you have no way of knowing they added anything to it. Personally, I think someone is over reacting to a normal business practice.
