I have been to AKR twice and FIBR (Fantasy Island Beach Resort) twelve or thirteen times. Both places are FANTASTIC for diving and offer three boat dives to three different sites each day. It's great to visit both resorts because the diving on the north side of the island vs. the south side is different and it's fun to explore those differences.
That being said, if I were going to visit Roatan as a non-diver there's no way I'd want to be at AKR. Even the air-conditioned cabins are too rustic for me. The only convenience in your room is an air-conditioner...and quiet. If this is what your bride will enjoy (after all, we're all different
) then by all means go for it. I, on the other hand enjoy lounging around the amazing horseshoe shaped beach at Fantasy Island or even at the beautiful new swimming pool with the swim-up bar...where drinks are free as part of the all-inclusive rate. (Which is RIDICULOUSLY inexpensive) Then when I've had enough of the tropical sun, I like to wander in and grab my laptop computer and take advantage of the free WiFi at FIBR. (AKR charges you $250 as a deposit for a modem, besides what the weekly rate is...can't remember that part) It's always nice to check in at home and make sure everything is going OK with my elderly dad. Once I'm done on the computer, I might decide to return to the room and prop myself up on the king size bed for a nap. Or I could grab the remote control for the television and tune in to the news or one of my favorite shows. (All the networks in the U.S. are available)
