Just about any beach is gonna be good for a 5 yr old to snorkel. What we consider a good place, and a 5 year olds idea of snorkling are very different. What part of Florida are you staying in? If in S. Florida, any beach in Broward County will be good, some better than others. Looking for shells is always fun. If you travel a little farther south, try Haulover Beach. The north side is quite protected and you will see plenty of fish in very shallow water. I took my daughter there when she was about 5, and the biggest thing was that she wanted to be able to stand up. Just wear some kind of beach shoes (some kids don't like fins) as there is a lot of glass.
As mentioned before, John Pennecamp in Key Largo is good, and to the north in Palm Beach, Red Reef park is decent.
