I am finding lately that a significant portion of my students have a hard time reading an underwater compass, due to eyesight issues. Has anyone got any information about the availability of an oversized compass?

Perhaps your students should look into corrective lenses (contacts, prescription lenses in mask, gauge-reading inserts).
If they can't read a regularly-sized compass, e.g., Suunto SK-7, then they probably have a difficult time reading other instruments as well.
