after drying by the fire was the choice of wing or cut or altered,
this is the first version of what eventually happened.
any opinions?
what to do with pockets? leave as is
or decrease?

What are the pockets intended to do? I'm not sure why you'd want pockets on your wing...
 
Those do not go on the wing. They are pockets for the waist strap on the harness. Will clutter it up nicely.

Do you experience any tank roll with that plate? In your opinion could an ATS be rigged for twins? That tank looks good on that BCD, nice work.

on this plate and the BCD can be used
any tank or two tanks of 11 liters
