One of the obvious things is the surface area to volume ratio. Larger people will always have less surface area relative to volume through which to lose heat. Shape matters, too, and for the same reason. A 200 # person who is 5',2" will stay much warmer than a 200# person who is 6'2".
Those of us who are built more like marine mammals (aka lots of Bioprene) stay warmer, longer.
