RoatanMan:
Relying on any DM for help/supervision is really outside the scope of their duties to a large degree. Sure, they'll help if they see something odd, but their duty is to find and point out all the cool stuff that the South side of Roatan has to offer.

As far as i am concerned my primary duty when i am divemastering is not to point out cool stuff it is the safety of my divers, that means assisting them with equipment setup so as to avoid any equipment related problems in the water, and ensuring people stay within the no decompressionj limits and regularly check their air. Sure pointing stuff out is nice, but safety comes first.

My advice is to choose a dive shop that uses instructors to lead their dives. Instructors are well practised as dealing with students in the water and that added watchfulness becomes second nature regardless of whether or not the divers are students or certified.

... hmm, laid back, out of the way, quiet ...

You were obviously destined to go to The Reef House Resort in Oak Ridge. You never see it rated or published in the scuba rags, but it's been there for over 35 years, and since it's been purchased by new owners a few years back, it's the number 1 rated Roatan resort at www.tripadvisor.com . Check out http://www.tripadvisor.com/Search?geo=1&corrected=1&original=reef+hous+roatan&q=reef+house+roatan. Our first visit was last May, and it was the best vacation spot we've ever been to. Larry, the owner, asked when we'd be back. I told him there were too many dive destinations out there to say we'd be back soon. We just did Bonaire, now Belize in January, and guess what, probably back to Reef House in May. Check out www.reefhouseresort.com . Seriously, the place answers everything you have said you are looking for.
