Nobody has mentioned Agua yet. Very, very nice restaurant, Mediterranean cuisine. And they do in fact have the best ceviches on the island (they have 4 or 5 to choose from, and serve a sampler to boot). Like all the other suggestions, but Agua is a hidden gem...
