I would vote for Coz. You could arrange diving ahead of time with Dive with Martin, who is right at the cruise ship pier.
If you are an experienced diver, beware of the ship dive excursions. I went on one on Grand Cayman in 2005 (dive op was Red Sail Sports). Their dive boat was wonderful, but there were about 20 people on board, and hardly any of the divers had done any open water dives. Most had just certified, or had only a couple dives under their belts. Red Sail didn't take this into consideration, just willy-nilly paired everyone up & took us down to 100 feet.
For the second dive, we were given a long, complicated briefing, and then told to "go down & have fun". I was paired with someone who had never dove in the ocean before, and consequently had to surface after 10 minutes. I was NOT impressed. I hardly felt safe diving with him, with no DM, at 60 feet. To top it all off, of course I paid an arm & a leg for the whole debacle. (I think it was around $130 for 2 dives!)
Just a word of warning. I think you should definitely arrange something ahead of time on your own (to save $$$), and I would definitely recommend Coz for the ease of diving.
