I do it at the start as well. But I haven't done one in years. I did one a while back when I dropped 20 pounds of body weight. There is no reason for me to do it before each dive, as my equipment never changes, and I have a list of what weight I need for each of my 3 wetsuits.

When I said at the start of the first dive, I meant first dive of a given trip. Not the first dive of every day. As a mostly vacation diver, I'm generally going months between dive trips and often not wearing the same gear etc (warmer or colder water etc), so I find it helpful to check my weights on the first dive of a trip.

I hear ya. And good idea. Wetsuits due tend to change over time--that is "lose some of their integrity", requiring you use less weight. Plus, if someone rents, you never know what the buoyancy of the suit really is.
 
I would reckon you will probably not be a huge amount different to normal but worth doing the check if for nothing other than peace of mind.

Just a thought - take a couple of "clip on weights" with you. Strategically placed bungies will allow you to add/remove a couple of weights without having to rethread the weightbelt. I know that Pete aka (@The Chairman ) has a method of bungying weights so they are secure but easily removed.
 
I did your 2nd method - spread it out over several dives. As someone already mentioned - no big deal if you're only a couple lbs over. Should have it figured out by the next dive.
