I ordered some new thermo valves and they showed up with the vindicater knobs. I'm sure I wrote down the wrong numbers when I looked in the catalog.

I'd rather not have them, can they be swapped out for regular knobs?

What's the mechanism that make them a fewer turns to turn on and off. I haven't taken them apart yet to see.

The Vindicator has no relationship to the number of turns to open/close the valve that is a function of the valve itself. It just replaces the valve handle. Thermo Valves are noted for being quick opening valves and are not considered optimum for high O2 use by some because they are hard to crack slowly.
Some people like the Vindicator some don't. Almost every one likes the bigger handle.
If you get new valve handle the valve will take the same number of turns to open/close and probably have a smaller handle.

Why is it important to crack slowly?

Less heating from a sudden pressure increase in the lines or regulator. O2 Fires are never good.

I picked up a Vindicator knob for the valve on my boat tank, as I remember they have a few types dependent on the type of tank valve.

The Vindicator valves come in several color combinations and there are different models to fit different valves from different manufacturers.
