From the Release Notes, v.78 (a while back - 2020), it's just the new name for what used to be called Open Circuit Recreational mode (OC Rec).
As noted above, the new name merely highlights that even if recreational (vs Tech), the computer allows you to select multiple gases.

It's not in the manual if your manual version is older than 2020, since it was added in an update.

So the question is...

When would you want to use 3-gas nitrox mode vs. OC tech mode (which also allows gas switching between multiple nitrox mixes)?

I made the mistake of using 3-gas nitrox mode for a training dive where one of the skills was to switch GF mid dive and leaned you can't do that in 3-gas nitrox but you can do it in OC tech mode.

I never got a clear answer as to what circumstance favors 3-gas nitrox over OC tech.

Bigger numbers on the screen, less information that isn't useful during the dive.
I use recreational three gas nitrox mode for OC dives.
I would prefer if they had that option for CC dives.
