i knew that comment from the half-canuck would throw things out of proportion...

traditional recipe/ composition:
pig cheeks/ face
pig ears
pig brain
pork liver (yuck)
onions, garlic, chili peppers​

modern recipe (since the huge demand in bars for sisig means that pigs would either have to contribute other parts or have to grow extra faces)
pork (mix of lean meat, some ears, some cheeks)
onions, garlic, chili peppers
pork liver (in some places... i don't like liver in my sisig if i can avoid it)
you will notice no brain... well, it's not easy to come by, pigs are by nature not the most brainy of animals. also, the presence of "brain" in the dish tends to turn off the more cosmopolitan crowd...

brain gives the sisig a creamy texture... this has been replaced with either an egg cracked over the sizzling dish or a generous dollop of mayonaise... or both (yummm)

squeeze calamansi (local lime) over the sizzling dish, drizzle liberally with knorr seasoning and hotsauce, mix and enjoy...

the debate over where the best sisig can be found is as heated and drawn-out as a DIR/non-DIR quarrel... some people like it mushy... others crunchy... some dry... others moist...

i still think the best sisig was from trellis but their makati branch closed down about a decade ago... sigh...
