I'm looking for a good dive shop to get my tanks hydro'ed in the Miami area. Preferably, the shop would do their hydros in-house instead of sending them off elsewhere. Any recommendations?

Everyone sends them off to be done, however there are some cheaper places to do them versus the larger chains. Most of the companies doing them hydro all kinds of tanks (firefighters, hospitals, lab tanks, etc etc).

remove the valves myself before handing the tanks over?
Each hydro facility has different policies. Mine in Orlando wants the boot left on which they remove & replace for testing. It helps with floor space instead of laying them on pallets. But they want the openings taped/plugged & duct taped (not blue tape) labeled with cell number. Your LDS will do all of this for you. During the fall-winter months (Oct to Feb) scuba hydros are only done every 2 weeks so they can do them all at once. During the summer it's once a week. Just call before hand and talk to the facility.

Also you can search past posts to learn more about the Miami / southeast florida hydro experience & recommendations>>>>Like this Post:

Most of the fire extinguisher hydro places I've dealt with in FL don't dry tanks. By the time you get it and take it to the dive shop for VIP it will be flash rusted(steel) and will need tumbling. Your cost savings just vanished.

Only dive shop I know of that is a DOT hydrotester is in Lakeland.
