Yes it can. You can't switch it to Air mode for some time (it's 48 hours if I remeber) but you can set O2 percentage to 21 if you dive air after nitrox. This is probably because of CNS and OTU tracking reasons.
 
...but just to clarify I could dive on 32% then 21% then 36%?

Or once set at 32% that's my Nitrox for the day...?

I know the Aladin can be set to any mix for each dive, but some computers you can only change the mix of EAN through connection to a laptop or other crazy methodology...

Yes, you can set it for each dive e.g. you can dive 32%, 21% and then 36% or any other combination. And yes, it can be set with it's own buttons without using PC interface.
