I bought a pair of PST HP100s setup as doubles. I want to split them apart for singles. Do I need to swap the left-handed valve for a “normal” right handed one, or leave them be? My concern is having my air on the left and confusing a dive buddy.

Just don't max out the card mate if all you're going to do next year is pay interest

Why would a buddy be touching your valve? Can you no reach them yourself?

Older "skinny" 7/8"UNF neck 3500psi versions or newer 3442psi E7 versions with the common 3/4"NPST?

3500psi ones could be difficult to find plugs for, depending on the specific valve type. You could likely arrange a swap for the valves with someone who needs a manifold.

3442psi ones are more likely to have easily available plugs. Valves are common (including convertible DIN/Yoke "Pro" valves), but you will need appropriate burst discs in them.

Do you see yourself growing into doubles down the road?

Probably plug them and leave them be. Left handed valve is slightly weird but won’t do any harm, and you might want to mate them back up later.

Plug them if possible. They’ll make good sm valves if you ever go that way. Only risk is some nimrod on a boat with a clip board tries to check to be sure your gas is on and mistakenly shuts your valve off. Simple solution is don’t let nimrods with clip boards touch your gear.

If it’s one of the 7/8s manifolds it could be worth a decent chunk of change. If you have zero interest in doubling them up or sidemounting I’d say replace the valves and sell the manifold to someone who needs it. If tech is in your future, plug the valves.

If you have the slanted 7/8s and need the hard to find left side plug, let me know. I’m in the Bay Area too and can make them

They are skinny neck PSTs.

I don’t anticipate getting into “tech” anytime soon but if would be nice to leave that avenue open for me or anyone else who gets these tanks.

The valves on it are now are Thermos. Dunno if they are the “current” XS Scuba ones made in Taiwan or the older made in Japan ones.
