Hoping there’s a mainland local who can give me recommendations on dive shops to the south of Mt. Fuji.

Drysuit, NITROX, Deep certified, 100+ dives.
 
There is a super typhoon probably coming your way after hitting Republic of China(Taiwan) over next few days.
I am at ROC and this typhoon might affect my flight home on this Thur.
Have a nice trip in Japan.

how are their trips?
That's not an unreasonable getaway. I've had another person also recommend Shishihama.

Also, have you dived there enough to recommend Izu west (Shuzuoka/ Numazu side), versus east (Yokohama/ Tokyo side)?

oof yah mate. I saw that. Button up and stay dry!
It's looking like it's going to clip Okinawa a little on the backside.

luckily for me this will be in November, and i'm looking forward to some drysuit diving.
