If you plan to do future dives in colder water, especially to 80ft/25m or deeper, you'll definitely want to pursue the A700 over the S600. Otherwise the A700 has a slight edge in ease of breathing and costs slightly more as well, especially if you go the newer tech black version of the A700. Both newer versions of the 700/600 now have similar purge button characteristics and there's obviously a difference in cover designs. Overall, I would not suggest you let weight be a factor in your decision, both are very comfortable during the dive.
 
Scubapro now has a metal air barrel for the 600 which should make it a better cold water reg. We were told by the Scubapro Rep that it also had a metal orifice but it is not listed in the parts diagram (only the metal air barrel "kit") and the kit only has the metal air barrel.
 
The G500 (the S600's older brother) had the metal air barrel as well and it did not perform well in cold water, even with the orifice swapped out for the metal version. Deep + cold was the trouble spot. The A700 and the G250V (as well as the R series) are really designed better for colder water diving.

Just an update: I got the 700 and R295 octo (MK25 1st stage) and tested it in a quarry. Worked fantastic. Then, last week, I rang it out on a whole lot of dives on Cayman Brac. Flawless. Never even had to adjust the Venturi. It's a little weighty, but that's not even a consideration for me.

It's still new but so far I'm more than happy.
