Returning to GC after 25 plus years - looking for dive op/dive site recommendations

I would second (or third or whatever) Divetech/Cobalt Coast Resort. They have really affordable dive packages that's like $1100 for 7 nights lodging + 6 days of 2 tank boat dives + unlimited shore diving. Orange Canyon is still my favorite site, but make sure you check out the Kittiwake and I would say Stingray City is something that's worth doing once...
