Robert, I can't say enough good things about Huracan and also Turneffe IR. They are very different however as Downing suggested. Huracan is a tiny (8 guests) eco-lodge that's a little rustic, but in a lovely way. The diving around Long Caye and nearby Halfmoon Caye is, in my opinion, the best overall diving in the Caribbean. The food has been fantastic for the past few years with Chef Mynor and his unique menu. We are returning in March for out 7th consecutive year if that tells you anything.

TIR is very nice as well, but a much larger operation, with perhaps maybe 50 guests or so. The cater to both divers and flyfishers. The price is significantly higher, and while the diving there is very nice, it's not the same as out at Huracan.
 
Off the Wall out on Glover's reef is a fantastic spot - Owners Jim and Kendra are great people and their resort is very intimate and about as chilled out as things get. They do close down during the summer....not 100% sure when they open back up in the fall. Definitely a rustic but comfortable eco-resort with no AC and composting toilets, but it is a fantastic get-away-from-it-all spot with great diving. We've been out to that island twice via SlickRock and have dove with Off the Wall - great experience.
