Looks like we're taking the same cruise nuts4corals, albeit mine won't be until late January.
Roatan is the only one that has an official ship's excursion. My Costa Maya stop is indicated to be only from 11am to 4pm so not sure if there will be time to do any diving.
I found scuba and lion fish hunting on 'High Point Placencia Travel'. (Placencia Dive Shop Diving, Scuba Certification in Belize). Have you looked at that? It's a ten hour day on Harvest Caye so should be time to take the Ferry to Placencia and do it.
Really hoping you're going to do a long winded detailed post on how you made out finding dive opportunities after your cruise.
