we have friends that dive with Yucatek every time they're in Playa (at least once a yr). they're very reputable. their main shop in located on 5th Ave, but they do meet at the beach...near the Playa Maya Hotel...to board the boat.
all of the above mentioned (& many more) operators have good reputations. I would recommend visiting a few shops. talk to them...get 'feel' for them...& go who you are the most comfortable with.
