You know, temp is probably my least looked at metric, so I've never noticed how long it took to stabilize.
Let me check a dive log....

Same. And even then, not so often. Occasionally, someone will ask what the temp was on a dive, so I'll check. More recently, on a dive a few weeks ago, I noticed a thermocline around 50'. I wanted to check how much the temperature changed. I used the temp on my Garmin as it responds quicker.
