I use manual exposure when I have a degree of control of the environment. When I am shooting run and gun, I will often shift between manual and auto depending on conditions. Knowing when to use manual and when to shoot auto so as not to miss a shot takes a bit of experience.
I think of underwater shooting as the ultimate run and gun. Working in three dimensions (without a tripod or crane), shooting talent (fish and coral) that won't take direction, and trying not gulp through my tank, I found auto exposure to work just fine. I have complete exposure control, but have never found the need to stop and fiddle.
