It always bugs me when people don't report back on results, so I thought I would just say thank you to everyone who posted and helped me out here. We did the Thanksgiving trip and had a great time. Did one dive at Devil's Den, three dives at Blue Grotto (including quality time with Virgil the turtle), one dive at Paradise Springs, and snorkeled with the manatees at Crystal River (lots of them there, and very inquisitive). There were other divers around, but nothing was really "crowded" until the weekend. In fact, for our first dive at Blue Grotto and our dive at Paradise Springs, we were the only ones in the water -- pretty magical. The staff everywhere was super friendly and helpful.
Hopefully we'll get back there someday and maybe do a cavern class. Thanks again for all the suggestions.
