For most DIYers, it's a trial and error by nature process. The difference is one would never replace a poppet stem with a home made wooden stick just to see if it would work. Most are aware of the danger and the reason to match identical parts for parts in our experiments. If you have 90% parts and 90% instructions down with the specs, the risk is minimized. On top of that, you also need to have a safety plan to test your regs. A back up supply in case of failure. The actual science of fluid flow and material properties behind regulators is mostly beyond average folks' understanding but mechanical parts is doable to some extend.

As suggested, DIY is not for everyone and you need to know what you're doing and practice with caution. There are many DIRers before us and new comers will come after us. Knowledge is power and that is why we're here to learn from the experienced - people who have actually been there and done that, not just talking.
