If you want something other than 32 or 36%, it's always good to call ahead and see what's possible.

Much of the ability to get a custom blend is predicated upon whom the shop has working in the filling station.

One thing is pretty certain, never count on getting exactly that for which you request.

The shop I went to in Ft Lauderdale did not have anything banked, just blended it as needed; my mixes were 33.7%, 37.8%, 31.9% and 37%.

Remember that although your O2 meter reads to tenths of a percent, your reading is only accurate to +/- 1.0%. In reality, if you get within 2% of your target value you are just fine. Diving is very far from an exact science.
 
most shops will put in whatever you ask for, be sure to call a few days in advance and expect to pay for a custom blend. If your diving with the shop they generally have the proper mixes for the diving environment.

You will learn how to use different percentages and caluculate your dive plan in your class. Most people I know use the standard 32% and 36%. If I want to dive deep, I just use Air for the first dive, then switch to Nitrox blends for the next two.

I suggest Nitrox to those divers who are suceptible to DCS, doing multiple days of diving or for those that would like to spend some quality time at depth around 100 feet.

As a new diver, just dive, get comfortable with your gear and task loading. Just doing a couple dives a month using Nitrox, you will probably not notice a big difference from air.

Most shops around me (Florida east coast) blend to request and in fact they ask you what % you want when you bring in your tank.
You will also analyze your mix after the fill and record it in the fill log book along with the MOD and tank serial number. This is done so you are certain that what you think is in the tank is actually in there.
And yes around here we request different percentages according to the type of dive we are planning.
