So, what did you end up choosing for the boss?
 
Thank for all the comments. It has been fun looking up all of the shows & restaurants that y'all have suggested. I have given my boss his options. So far...

I have made a reservation at Gramercy Tavern for dinner. I personally thought the pan asian restaurant Raviepoo suggested was perfect but he said no. Go figure! Party poop! Maybe I will save that for my visit to the city! :D

The show will either be Hairspray or Mamma Mia...he will make up his mind tomorrow. Then it will depend on which one has tickets available! Thankfully I have a great contact there.

He won't need hotel accommodations so that was good. I still don't know where to send them for drinks after. I'd like to give them a few options so they can decide either before or once they know what their energy level & mood is after the show. I guess I can always let the driver (who is excellent) make suggestions to them.

I still have three weeks before their trip so that gives a little leeway.

The bar at the plaza is a nice, comfy place. It used to have hookers a few years ago. I don't know if that's still true.

Drinks are the least of your worries. You can't swing a dead cat in New York without hitting a bar.
 
There's also a very classy bar at the St. Regis Hotel. Not large, but very nice.

I enjoyed the atmosphere without the extra-curricular activities.
