Hey Iain.
I don't know if there are any that specifically run trips to find Mako sharks but I would presume if you got hold of a fishing charter boat they might be able to organise something for you.
There are a few Mako around but they never stay in one place so I imagine they wouldn't be too easy to track down. However start fishing and they magically appear.
 
Hi. if You want to see Mako sharks uplose, check out www.surfit.co.nz. This Gisborne (east coast above Hawkes Bay) based operator does cagediving with those fishies. I did not do this trip, because I find the price a bit too high.

Might worth trying though...
