When I was in Cozumel a number of the DMs had little spears for killing any lionfish they came across. The bigger ones were taken home to be cooked and the smaller became anemone chow.

Suffice it say I saw a lot fewer lionfish there than I did in DR & Jamaica!

There are many recipes in this thread http://www.scubaboard.com/forums/florida-conch-divers/287885-lionfish-recipes.html, but you will have to sort through some back-and-forth chat to find them (or do a thread level search).

Enjoy, and happy hunting!

Thanks for the tips! Should have googled before I posted but I am glad to see this conversation is already going on. We truly do have to eat them to beat them! Thank God they taste so good!!!!!

Thanks again for the help!

That's awesome! Unfortunately its not so in the Bahamas. When I was there every reef was loaded with Lionfish! The Bahamians are a little reluctant to start eating them, but I think they will learn to love the meat soon enough.
