I wore 2mm shorty over 5mm full + hood in Galápagos (61-72F water temperature)

I also know that almost all of my friends who went there used drysuits diving the Galapagos.
 
You can layer them either way. Just make sure the suits are a good fit.

If you find the full to be a little loose but the shorty a tight fit, try layering the shorter underneath the full. Or vice-versa.
