I'm in Vegas 3-4 times a year. It's only about a 7 hour drive and there's some decent diving along the way, plus we like the shows. Personally, we avoid the buffets. They are on the pricey side and we always feel like we need to eat as much as we can and usually end up leaving miserably full. I recommend looking at the different restaurants in the casinos and on the strip. Here's a list of some of the restaurants I can remember:

Wolfgang Puck (Bellagio)
the italian restaurant in Circus Circus (can't remember the name, but it has great food)
Maggiano's (Fashion Show Mall)
La Salsa Cantina (Luxor) it's a chain, but they have good food and margaritas
Oh, and for cheap, strong margaritas and pina coladas, check out Slots a Fun next to Circus Circus. The bar is in the back on the left.

Not anymore. They're pretty good, but have gotten pretty pricy, too.

They used to be. The current fad is the high class restaurants - Emeril's, Wolfgang's, etc. Most of those require reservations unless you feel like waiting an hour or 2 for a table. And cheap...nothing is cheap in Vegas anymore, especially on the strip...except the drinks at Slots a Fun...
